Fermentação Maloláctica/ Malolactic Fermentation

As fermentações malolácticas ( segunda fermentação que ocorre nos vinhos tintos, onde os ácidos málicos são transformados em ácidos lácticos) estão muito lentas este ano. Agora, com o tempo frio a chegar, as coisas serão ainda mais difíceis, já que as bactérias responsáveis por essa fermentação não trabalham bem com o vinho abaixo dos 20º.

Malolactic fermentations (a second fermentation that takes place in red wines, which transforms malic acid in lactic one) are very slow this year. Now the cold weather is arriving, what will not help at all, once the bacterias that are responsible for the fermentation process don´t work well in wines with a temperature below 20º.
